Ingredients:

For the Cake:

  • 1 and 3/4 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 1 and 1/2 teaspoons baking powder
  • 1 and 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water

For the Chocolate Frosting:

  • 1 cup unsalted butter, softened
  • 3 and 1/2 cups powdered sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 2 teaspoons vanilla extract
  • 4-6 tablespoons heavy cream or milk

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Prepare the Cake Batter:
    • In a large mixing bowl, sift together the flour, cocoa powder, granulated sugar, baking powder, baking soda, and salt.
    • Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Beat on medium speed until well combined.
    • Reduce the mixer speed to low and carefully pour in the boiling water. Mix until the batter is smooth and well combined. The batter will be thin.
  3. Bake the Cakes:
    • Divide the batter evenly between the prepared cake pans.
    • Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center of the cakes comes out clean.

  4. Make the Chocolate Frosting:
    • In a large mixing bowl, beat the softened butter until creamy.
    • Gradually add the powdered sugar, cocoa powder, salt, and vanilla extract. Beat on low speed until combined.
    • Add the heavy cream or milk, one tablespoon at a time, until the frosting reaches your desired consistency. Beat on medium-high speed until smooth and fluffy.
  5. Assemble the Cake:
    • Once the cakes have cooled completely, place one cake layer on a serving plate or cake stand.
    • Spread a layer of chocolate frosting evenly over the top of the cake layer.
    • Place the second cake layer on top and frost the top and sides of the cake with the remaining frosting.
  6. Serve and Enjoy:
    • Slice and serve the chocolate cake immediately, or store it in an airtight container at room temperature for up to 3 days.
