Air Fryer Egg Rolls

  1. Prepare the Filling:
    1. Heat a large skillet or wok over medium-high heat. Add the ground pork (or your chosen protein) and cook until browned. Break it up into small pieces as it cooks.
    2. Remove excess fat if necessary. Add the garlic, ginger, and onion to the skillet and sauté until the onion is translucent.
    3. Add the shredded cabbage and carrots to the skillet. Cook until the cabbage is wilted and the vegetables are tender.
    4. Stir in the soy sauce, oyster sauce (if using), sesame oil, salt, and pepper. Cook for an additional 2-3 minutes. Adjust seasoning if needed. Remove from heat and let the filling cool slightly.
  2. Assemble the Egg Rolls:
    1. Lay an egg roll wrapper on a clean surface, with one corner pointing towards you (like a diamond shape).
    2. Place about 2 tablespoons of the filling in the center of the wrapper.
    3. Fold the bottom corner over the filling, then fold in the sides. Roll up tightly, sealing the top corner with a bit of beaten egg.
    4. Repeat with the remaining wrappers and filling.
  3. Cook the Egg Rolls:
    1. Preheat the air fryer to 380°F (193°C) for about 5 minutes.
    2. Lightly spray the egg rolls with cooking spray or brush them with a small amount of oil.
    3. Place the egg rolls in the air fryer basket in a single layer. You may need to cook them in batches depending on the size of your air fryer.
    4. Cook for 8-10 minutes, turning halfway through, until the egg rolls are golden brown and crispy.
  4. Serve:
    1. Remove the egg rolls from the air fryer and let them cool slightly before serving.
    2. Serve with sweet and sour sauce, soy sauce, or your favorite dipping sauce.

Enjoy your crispy, delicious air fryer egg rolls!
